Ingredients
3 cup Rice (washed)
500g Beef (Cubed)
1 tin Coconut milk
1 tin Red kidney beans (drained and rinsed)
1 medium Onion (Chopped)
3 cloves Garlic (Chopped)
3 tsp Salt
Thyme
Black pepper
Preparation
Fry the onion and garlic until brown
Add some Thyme, Salt and Black pepper
Add Beef and stir then leave it to seal
Add one litre water
Cook the meat for 1 hour
Add the rice and stir
Add 4 cups water and coconut milk and stir
Add some more thyme and black pepper (thinly sprinkle on top of the rice) and cook for 5 minutes
Add the red kidney beans and stir, then cover the pot and steam it for 20 minutes (on a low heat)
